Tomorrow I'm going to try another grilled chicken recipe. This one sounds simple and good. Grilled Chicken Dijon. I think I will mix up my own Italian dressing using olive oil and balsamic vinegar. And, since we have fresh Brussel sprouts in the fridge.. I have to try this recipe. Brussel Sprouts in Garlic Butter. It sounds so good! I know, I know.. butter is an unfavorable fat but sometimes its worth it! LOL A small tossed salad and some chilled applesauce for dessert.. sounds like a plan!

Chicken was great. It turned out I had some Italian Dressing in the fridge so I used that. Next time I'd really like to try to make my own. Brussel sprouts good but not worth the hassle. I still prefer them steamed I think

Love My Sun Oven!
This sounded like a good one to try in my sun oven this afternoon. Baked Chicken with Garlic and Rosemary I think I'll also throw in some sliced veggies in a foil pouch while I'm at it. Top it off with a green salad and we should be set.
***********
Hey, we've got another keeper here! I decided to just slice up a potato and add that around the chicken- We left it all in the sun oven for an hour & it turned out great. We served a big tossed salad with it and feasted well. When the weather cools off I will enjoy trying this recipe in a regular oven. I think the chicken will have better color without a cover, but, cover or not, the flavor really was lovely.

Left-over Night
Well, you know us.. can't let food go to waste. So, tonight we're going to try the rest of that Mediterranean Beef Stew over the leftover lemon rice. Hoping that the rice will cut the intensity of the stew a little. With some steamed broccoli.. who, knows? It could be wonderful. (hope springs eternal) LOL
************
Ok.. still not good. We will not make that again.

Day 5 Asian Meets Southwest
Found this recipe on recipezaar that I have to try.. Easy Grilled Lime Chicken . It sounds really good, and easy.. I'm all about easy. Especially in this weather! Think I'll serve it with 1/2 a microwaved potato and some frozen green beans.. maybe try an adaptation of this recipe:* Corn and Green Beans in Lime Shallot Butter. I have beans & corn in the freezer and I like the idea of repeating the lime flavor..
************************
Ok, this meal was to die for! We both gave the chicken 5 stars- that marinade is wonderful. The meat turned out tender and so packed with flavor- a real keeper! And I loved how the veggies worked with it. We each had 1/2 microwaved potato to round off the meal with 3 grape tomatoes thrown on the plate for color. DELISH!!
*my adaptation..(2 servings).
1 green onion (I didn't have shallots)
1 c corn- 2 C
1 1/2 c green beans -1C
1 t olive oil (1F)
1 t butter (1F) would probably leave out next time as I don't think it affected the taste that much)
sprinkling of sliced almonds for crunch
splash of lime juice

Day 4 YUM!!! Tuna Salad, Mediterranean Style
Today we revisited the Mediterranean Greek Salad from Monday. We had some left over salad dressing, feta cheese and olives, soo.. We made a big salad tossed it with the dressing etc and added some tuna fish for protein. Bob had told me what kind of tuna to buy at Costco- white albacore type- and, I have to say good tuna makes all the difference! We practically licked the plate it was so good. That is one meal that is going on our FAVORITES list!

Day 3..back to a standby
Tomorrow I think we'll have some good ol' stove top, grilled chicken-Marnie style. (I slap some frozen chicken thighs on a Pam sprayed frying pan, cover with a lid and cook on med flame till partially thawed on the bottom. Then flip them, shake some seasoning on them, put the lid back on and when the bottom is nicley brown I flip them again.. more seasoning. This time I usually add some garlic powder and a quick sprinkle of cayenne pepper. When they are just about done I splash some lime juice on them and let them simmer for a few more minutes. ) I'm going to serve them with a new recipe- Broccoli and Apple salad, & some steamed cauliflower. I might even have enough carbs left to throw in 1/2 baked potato each. Gotta put it thru the zone runner to see. .. Nope, no potato tonight.
Chicken- 3P
1/2 recipe Broccoli & Apple salad- made with 1 1/2 T fructose (instead of 3 T sugar) = just under 3 C
sliced almonds tossed on salad= 2 F
1 c. cauliflower- .25 C
*************************
After the meal..
The salad was tasty but the vinegar flavor was a little intense. We found we liked it better with the chicken cut up in it. I'm gonna have to rework it a little but I think it has great possibilities.

Day two- still in the Mediterranean
Going to the crockpot on Tuesday.. I'm serving Mediterranean Beef Stew The only change I think I'll need to make is to cut the meat in half. It's about double the P we need for 4 servings. For Carbs I think 3 Triscuits and fresh fruit for dessert.
*******************************
After the meal..
Well, the stew was definitely not our favorite. VERY intense flavor.. I guess leaving out 1/2 the meat was not a great idea. It was interesting, but, we will not be making it again. Can't win 'em all.

Day One.. goin' Greek!
Tomorrow is Memorial Day. One of our goals for the day is to buy a new barbeque. So, dinner will be my first 'new recipe' try. Kalyn's Souvlaki Recipe I think I will serve it with Tzatziki Sauce, Mediterranean Salad with Hummus Dressing & Georgette's Really Lemony Greek Pilafi.. Going to have to check everything with my zone tracker but I think this will come out pretty close.
Ok.. here's how it breaks down for 2 servings:
Kalyn's Souvlaki
2 Costco pork chops =6P
Mediterranean Salad with Hummus Dressing
3T dressing = 5 F (a little high hmmm.. maybe *I'll cut down on the olive oil) * Did use only 5 T olive oil and then only 2-1/2 T dressing on each salad
Salad
6 olives= 2 F
Tzatziki Sauce
1.9 P for1/2 recipe (We didn't come close to eating that much.. maybe 1/4 between the two of us)
Lemon Pilaf (1/2 c. each)
4 C
4.5 Fat (too high- going to cut the olive oil to 1 tsp)
1 flour tortilla (couldn't find pita bread in WalMart. Aaargh.)=2 C
***************
It all turned out great. Bill said the Tzatziki Sauce was better than My Big Fat Greek Restaurant's. I think we overcooked the meat but it was tender anyway. If I were making it just for me, I'd skip the rice and have some broccoli and maybe applesauce for dessert- although Bill liked the rice. Its not really the recipe, I'm just not a big fan of rice. Anyway, nice to have my first trial run at becoming a 'Zone Foodie' a success. Thanks, Kalynn!
I just did a double check on my numbers and realized that I used a lot of lemon juice in this menu (1/3 c= 1 C) .. May be a little high on C. Will probably cut the rice down to 1/4 c. next time. And, it was also a little high in F although all the fat was from favorable sources so not too worried about that.
