Comfort Food Italian Style

Torta Salata con Cavolfiore
(Savory Tart with Cauliflower)
from Dr. Daniela Morandi author of Il Bello Della ZONA, a Zone Italian cookbook.

6 Block Meal

Ingredients:
1 cup egg substitute (I used 4 eggs)
2 ounces parmesan cheese
4 cups cauliflower
½ cup corn (fresh off the cob) (I used frozen)
3 kiwis
2 tablespoons Zone Extra Virgin Olive Oil
2 teaspoons dill (I used 1 tsp dried and my dill is very old. Maybe 1/2 tsp?)
1 teaspoon parsley
salt & pepper

Instructions:
Steam cauliflower, divide into florets and cook until tender in a sauté pan with 1 tablespoon of olive oil. Transfer to a small glass baking dish brushed with a bit of oil. Beat the egg substitute with the parmesan, corn, herbs, salt, and pepper. Pour everything over the cauliflower and bake at 350°F, cook until golden brown. Complete the balance with the kiwi.

This recipe came in my email this morning from "Dr Sear's Zone". We had some cauliflower in the fridge that needed to be used so I decided to give it a try. Can we just say delicious?! We both loved it. Bill liked it so well he asked if we could have it once a week. Who knew? Comfort food in the Zone!

**********

Later.. Well, I've made this recipe twice since the original posting and both times we were a bit underwhelmed. So.. don't know what made the difference but it is very disappointing. It was so good the first time.. don't know if we'll try it again.

Another good one..

Yogurt Grilled Chicken with Pineapple Roasted Red Pepper Salsa

We tried this one on Thursday. Loved the chicken but none of us were impressed with the salsa- we'll definitely skip it next time around. I did cut the hot sauce in half but that was my personal preference. Anyway, another recipe to add to my growing collection of marinades. YUM
